  • Serra da Estrela cheese100 g
  • Potatoes500 g

  • For frying Olive oil
  • To taste Salt
  • To taste Black pepper

Method

Soak the salt cod in cold water for 24-48 hours, changing the water several times to remove excess salt. Shred the cod.

Boil the potatoes until tender. Peel and mash them well.

Finely chop the onion and parsley.

In a large bowl, combine the shredded salt cod, mashed potatoes, chopped onion, and parsley. Mix well.

Add the eggs to the mixture and season with salt and pepper. Be careful with the salt, as the cod may still be salty.

Cut the Serra da Estrela cheese into small cubes.

Take a spoonful of the cod mixture and flatten it in your palm. Place a cube of Serra da Estrela cheese in the center, then cover with another spoonful of the mixture, shaping it into a small oval or ball.

Heat olive oil in a deep frying pan or pot over medium heat.

Carefully drop the fritters into the hot oil, a few at a time, and fry until golden brown on all sides.

Remove the fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
