- Black pepper1/2 teaspoon

Prepare the onions: Thinly slice the yellow onions. The thinner, the crispier they'll get!
Form the beef: Divide the ground beef into 4 equal portions (about 4 ounces each). Gently form them into loose balls β don't pack them too tightly.
Heat the skillet: Heat a large cast-iron skillet or griddle over medium-high heat. Add the vegetable oil.
Smash the burgers: Place the onion slices in 4 piles in the skillet. Place a beef ball on top of each pile of onions. Using a sturdy spatula, immediately smash the beef ball down as thin as possible (about 1/4 inch thick). Press firmly to ensure the onions get pressed into the patty.
Season and cook: Season the patties generously with salt and pepper.
Flip and cheese: Cook for 2-3 minutes, or until the edges are crispy and the bottom is nicely browned. Flip the burgers and cook for another 1-2 minutes. Top each patty with a slice of American cheese during the last minute of cooking to allow it to melt.
Assemble the burgers: Spread yellow mustard on the top and bottom buns. Place the cheesy burger patties on the bottom buns. Top with dill pickle chips and the top bun. Serve immediately and enjoy!
