First, make the mint-infused simple syrup: Combine sugar and water in a saucepan. Bring to a simmer over medium heat, stirring until sugar is dissolved.
Remove from heat and add the fresh mint leaves. Let steep for at least 30 minutes, or up to an hour, for a stronger mint flavor.
Strain the syrup through a fine-mesh sieve, discarding the mint leaves. Store in the refrigerator until ready to use.
To make the Mojito: Gently muddle the sugarcane sticks in a sturdy glass.
Add the mint-infused simple syrup, white rum, and lime juice to the glass.
Fill the glass with ice and top with club soda.
Garnish with extra mint sprigs and a lime wedge. Serve immediately and enjoy!
