Method

1

Preheat oven to 350°F (175°C).

2

In a large bowl, whisk together all-purpose flour, sweet rice flour, sugar, salt, and instant dry yeast.

3

Warm the milk slightly (about 110°F or 43°C) and add it to the dry ingredients along with the melted butter.

4

Mix until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.

5

Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.

6

Punch down the dough and divide it into 6 equal portions.

7

Shape each portion into a sweet potato shape. Use a knife to create indentations to mimic the texture of a sweet potato.

8

Brush the shaped breads with a little melted butter or milk and dust generously with purple sweet potato powder.

9

Sprinkle with black sesame seeds.

10

Place the shaped breads on a baking sheet lined with parchment paper.

11

Bake for 15-20 minutes, or until golden brown and cooked through.

12

Let cool slightly before serving. Enjoy the delightful taste and beautiful presentation of your homemade Goguma-ppang!
