  • Chili powder1/2 tsp
  • Turmeric1/2 tsp
  • Olive oil3 tbsp
  • Vegetable broth4 cups
  • to taste Salt
  • to taste Black pepper
  • White vinegar2 tbsp

Method

Prepare the lentils: Rinse the lentils and cook them in vegetable broth until tender but not mushy. Drain and set aside.

Prepare the onion dust: Thinly slice two onions. Toss with a little salt and air-fry until crispy and deeply browned. Let cool completely, then pulse in a food processor until it resembles a coarse dust.

Prepare the air-fried chickpeas: Toss the drained and rinsed chickpeas with a little olive oil, salt, pepper, and cumin. Air-fry until crispy.

Fry the remaining onion: Thinly slice the remaining onion and fry in olive oil until golden brown and crispy. Drain on paper towels.

Cook the pasta: Cook the pasta according to package directions. Drain and toss with a little olive oil to prevent sticking.

Assemble the Koshari: In bowls, layer the rice, lentils, pasta, and tomato sauce. Top with crispy fried onions, air-fried chickpeas, and a generous sprinkle of onion dust. Drizzle with white vinegar to taste.
