Ingredients
- Beef chuck1.5 lbs
- Massaman curry paste4 tbsp
- (13.5 oz each) Coconut milk2 cans
- medium, cubed Potatoes2
- large, chopped Onion1
- cup, roasted Peanuts1/2
- Fish sauce2 tbsp
- Brown sugar1 tbsp
- Lime juice1 tbsp
- Vegetable oil2 tbsp
- Water1/2 cup
- to taste Salt
- to taste Pepper

Cut the beef into 1-inch cubes.
Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the beef and brown on all sides. Remove the beef and set aside.
Add the chopped onion to the pot and cook until softened, about 5 minutes.
Stir in the Massaman curry paste and cook for 1-2 minutes until fragrant.
Pour in the coconut milk and water, scraping up any browned bits from the bottom of the pot.
Return the beef to the pot. Add the potatoes, fish sauce, and brown sugar. Bring to a simmer, then reduce heat and cover.
Simmer for 1.5-2 hours, or until the beef is very tender and the potatoes are cooked through.
Stir in the roasted peanuts and lime juice. Season with salt and pepper to taste.
Serve hot with rice.
