Ingredients
- medium, boiled and mashed Potatoes2
- Frozen Peas1/2 cup
- medium, finely chopped Onion1/2
- teaspoon, grated Ginger1
- cloves, minced Garlic2
- Garam Masala1 teaspoon
- Cumin Powder1/2 teaspoon
- Coriander Powder1/2 teaspoon
- Turmeric Powder1/4 teaspoon
- (or to taste) Chili Powder1/4 teaspoon
- to taste Salt
- to taste Pepper
- package (thawed) Puff Pastry Sheets1
- Oil1 tablespoon
- as needed Water
- for serving Tamarind Chutney
- for serving Mint Chutney

In a pan, heat oil over medium heat. Add chopped onion and sauté until golden brown.
Add grated ginger and minced garlic. Sauté for another minute until fragrant.
Add garam masala, cumin powder, coriander powder, turmeric powder, and chili powder. Sauté for 30 seconds.
Add mashed potatoes and frozen peas. Mix well and cook for 5-7 minutes until heated through. Season with salt and pepper to taste.
Remove from heat and let the filling cool slightly.
Preheat your air fryer to 375°F (190°C).
Unfold the puff pastry sheet and cut it into equal squares (about 4-5 squares per sheet).
Place a spoonful of the potato and pea filling in the center of each square.
Brush the edges of the pastry with water. Fold the pastry over to form a triangle, pressing the edges to seal well. You can use a fork to crimp the edges for a decorative look and to ensure they are sealed.
Lightly brush the samosas with oil.
Place the samosas in the air fryer basket in a single layer, being careful not to overcrowd. You may need to cook them in batches.
Air fry for 10-12 minutes, or until golden brown and crispy, flipping halfway through.
Serve hot with tamarind chutney and mint chutney.
