- Garlic4 cloves
- Fresh Rosemary2 tablespoons
- Fresh Thyme2 tablespoons
- Olive Oil4 tablespoons
- Butter2 tablespoons
- Salt1 teaspoon
- Black Pepper1/2 teaspoon

Preheat your oven to 400°F (200°C).
Wash and scrub the potatoes. Place each potato between two chopsticks or wooden spoons to prevent cutting all the way through.
Make thin, even slices across each potato, about 1/8 inch apart.
In a small bowl, combine the minced garlic, rosemary, thyme, olive oil, melted butter, salt, and pepper.
Brush the garlic herb mixture all over the potatoes, making sure to get in between the slices.
Place the potatoes on a baking sheet lined with parchment paper.
Bake for 45-60 minutes, or until the potatoes are tender and the edges are crispy. Baste with the garlic herb mixture halfway through cooking.
Let cool slightly before serving. Enjoy!
